Bread rolls with cheddar and chives

I came up with this recipe one day that I was in the mood for tapas and a glass of my favorite red wine instead of a proper lunch. I mixed flour with cheddar and chives and those bread rolls were just delicious.

Ingredients

  • 100 grams dinkel flour
  • 200 grams wheat flour
  • 200 grams all purpose flour
  • 1 teaspoon dry yeast
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 2 tablespoons saffron infused olive oil
  • 300 ml hot water
  • 100 grams coarsely chopped cheddar
  • 2 tablespoons finely chopped chives

In a large bowl put the flour, the dry yeast, the salt, the brown sugar, the olive oil and the hot water. Knead with hands until the dough is pliable and does not stick in your hands. Cover the bowl with a towel and let the dough for 60′ to rise.

Add to the bowl the grated cheese and the chives and knead again well. Divide the dough into 12 smaller pieces. Shape balls and place them into greased muffin pans. Cover with the towel again and let the bread rolls to rise.

Bake in preheated, at 180 degrees, oven for 30 minutes. You can enjoy them hot but once cooled they are also delicious.  🙂
