- 8-10 apricots (depending on their size)
- 200 grammars Greek yogurt
- 50 grammars butter at room temperature + some more for greasing the pan
- 200 grammars powdered sugar + a little more for decoration
- 100 grammars all purpose flour
- 3 eggs
- 150 ml milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Cut the apricots in half and remove pits.
Grease well a large ovenproof dish for tarts. Spread the apricots with their inner part down and bake in preheated at 180 degrees oven for 15′-20 ‘.
Meanwhile prepare a light dough beating all the remaining ingredients in the mixer bowl (the dough will be quite fluid).
Pour the dough on the apricots and continue baking for another 30′-35 ‘.
The clafoutis dough will rise significantly but once it is out of the oven will be fairly flat.
“Dust” with powdered sugar and serve.
