- 2 mashed bananas
- 1 teacup brown sugar
- 1/2 teacup oatmeal
- 1 teacup grated coconut
- 2 1/2 teacups self raising flour
- 1 teacup coconut milk
- 1/2 teacup corn oil
- 1/2 teaspoon pineapple or vanilla extract
Mix all the ingredients well in the mixer bowl. Divide the dough in 12 paper liners for muffins and bake them in preheated oven, at 180 degrees, for 21′ – 22 ‘.
You could also use the same amount of dough and bake a cake in a nonstick cake tin for about 50’-55’. In that case (if desired), decorate with pineapple glaze which you can easily prepare mixing together 3 tablespoons caster sugar, 1 teaspoon of water (if necessary add a bit more) and 1/2 teaspoon pineapple extract.
