Feta cheese pancakes

Sometimes we just need a quick snack to grab and a cup of coffee to refuel ourselves. Savory snacks are the perfect “match” for a cup of coffee around lunchtime. Starbucks’ unique origin Sumatra coffee is full of aromas and its full “body” can be paired uniquely with cheese or/and mushrooms. Those savory feta cheese pancakes can greatly escort a cup of Sumatra coffee.

Ingredients

  • 270 grams all purpose flour
  • 5 grams baking powder
  • 330 ml lager beer
  • Honey (optional)
  • Sesame (optional)

 

Put the flour, the baking powder and the beer into a big bowl. Whisk the ingredients until you have a slightly fluid mush. Leave the mixture in the fridge for at least 30 minutes.

Squeeze the feta cheese with a fork and add the cheese into the mush.

In a pan, heat some olive oil over medium heat. Use a table spoon and take small spoonfuls of the mixture to fry in the olive oil. Fry for 1-2 minutes on each side until the pancakes get golden brown.

Serve immediately and if you wish sprinkle with some honey and sesame. You can also enjoy those feta cheese pancakes in room temperature.
