Tarator soup

When I was a little girl, my dad (who is still a great cook) made a cold soup during summer time which he called “Tarator”. For many years I believed that this was a name that he invented for this recipe in order to impress us :-) False, my friends. I found out few years ago that Tarator actually exists for many years now and it is a cold soup recipe originated from Bulgaria. Try it as it is a great alternative dish for hot, summer days.

Ingredients

  • 1 kilo strained yogurt
  • 1 large cucumber cut into small cubes
  • 2 garlic cloves finely chopped
  • 6 tablespoons olive oil
  • 3 tablespoons vinegar
  • 4 teacups water
  • Salt, Pepper

 

Put all the ingredients in a bowl and mix well. Leave the soup in the refrigerator to chill. Serve the soup well chilled adding some freshly grounded pepper if you wish.
