Tabbouleh

Tabbouleh is a Lebanese salad which is usually served as an appetizer in the Arab countries. Its main ingredients are parsley, tomatoes, onion, olive oil and lemon juice. However, there are a lot of variations i.e. with cucumber, lettuce, garlic, etc. Tabbouleh is a great salad which can also accompany a BBQ dish.

Ingredients

  • 1/2 teacup cracked wheat
  • 1 teacup boiled water
  • 1 bunch of fresh parsley
  • 3 tomatoes
  • 2 small cucumbers
  • 4 spring onions
  • A few mint leaves
  • ¼ teacup olive oil
  • Juice of 1 lemon
  • Salt
  • Tortilla wraps to serve

 

Put in a bowl the cracked wheat and the boiled water. Cover with a clean towel and let the cracked wheat to absorb the water (about 2 hours).

Finely chop the tomatoes, the cucumbers, the parsley, the mint and the spring onions.

Add the herbs and vegetables into the bowl with the cracked wheat. Season with salt, add the olive oil and the lemon juice and toss the ingredients well.

Serve with tortilla wraps.
