Easy-to-make puff pastry for pies

Pies of all kinds are a main chapter of Greek culinary tradition. We make pies with various puff pastries, and we stuff them with anything that we love. Cheese, cold cuts, spinach, vegetables, anything that you can imagine. The sky is the limit! We eat pies on every occasion. We eat pies for breakfast, for lunch, for snack, etc. This recipe is all about the puff pastry, the recipe of which was given to me by a friend who owns a small coffee shop in Moschato, nearby my office. In this coffee shop, the owners, prepare and bake every day various pies, pizza and sandwiches for their happy customers. Stuff the pies with any ingredients that you love, and I am absolutely positive that they will become your favorite snack.

Ingredients

  • 200 ml hot water
  • 200 ml milk
  • 200 ml vegetable oil
  • 1 sachet of dried yeast (8 grams)
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 650 grams all-purpose flour

 

In a bowl, put the hot water, the milk, the corn oil, the yeast, the salt and sugar and stir the ingredients with a spoon.

Then add the flour and knead with your hands until you have a soft, elastic dough.

Let the dough to rest for about 20 minutes.

Cut the dough into equal sized balls, weighing about 100 grammars each.

Turn the dough into a floured surface and with a roll pin, roll the dough into 0.5cm sheets.

Fill the pies with any ingredient that you love. With cheese, ham, spinach, etc.

Fold the puff pastry in the middle and press the edges of the pies with your fingertips to “seal” them.

In a bowl, whisk 1 egg with 2 tablespoons of water and spread the mixture over the top of the pies. Optionally, sprinkle with sesame seeds.

Bake in a preheated, at 180 degrees, oven for about 30 minutes.
